Reuben Casserole (3/16/2007)


1 ½ cups Lite or fat-free Thousand Island Dressing
1 loaf rye bread (cubed)
1 pound sauerkraut (rinsed and well drained)
1-1 ½ pounds corned beef (cut into bite size pieces or slices)
2 cups shredded Swiss cheese (or use sliced if you like)
¼ cup melted margarine


Preheat oven to 350-degrees. Spray a 9 x 13 inch baking dish with cooking spray. Place some of the rye bread cubes on bottom of dish. Top with ½ the sauerkraut, ½ the corned beef, ¾ cup dressing and 1 cup cheese. Top that with the other half sauerkraut, corned beef, dressing and cheese. Then, cover with remaining rye bread cubes. Drizzle with melted margarine. Bake uncovered for 35-40 minutes to warm thoroughly.
