Easy Shrimp Pasta for Two and Decadent Triple Layer Mud Pie (2 Valentine's Day recipes) (2/9/2007)

Valentine's Day Dinner (main course & dessert)

Easy Shrimp Pasta for Two

2 tablespoons Kraft Balsamic Vinaigrette Dressing
½ pound shrimp, cleaned (fresh or thawed frozen is fine)
¾ cup chopped tomatoes (about 1 medium)
4 ounces (1/2 of 8 oz. Pkg.) Philadelphia Cream Cheese, cubed
1 teaspoon dry basil leafs
¼ pound (4 ounces) fettuccine, cooked, drained
2 tablespoons Kraft Shredded Parmesan, Romano, and/or Asiago Cheeses

Pour dressing over shrimp in small bowl; cover. Refrigerate at least 20 minutes. Remove shrimp from marinade; set aside. Heat large skillet on medium heat; add shrimp. Cook 3 minutes, or until shrimp turn pink, stirring frequently. Remove shrimp from skillet, using slotted spoon; cover to keep warm. Set aside.

Add tomatoes, reserved marinade, cream cheese and 1 teaspoon basil to same skillet; cook and stir 3 minutes; until well blended. Add shrimp; cook until heated through, stirring occasionally.

Place hot fettuccine on large serving platter; top with the shrimp mixture. Sprinkle with shredded cheese. Serve and enjoy.



Decadent Triple Layer Mud Pie

3 squares Baker's Semi-Sweet Baking Chocolate, melted
¼ cup canned sweetened condensed milk
1 Keebler Chocolate pie crust (or Oreo Pie crust) (6 oz.)
½ cup chopped pecans or walnuts, toasted
2 cups cold milk
2 pkg. (4 serving size) Jell-O chocolate flavor instant pudding & pie filling
1 tub (8 oz.) Cool Whip whipped topping, thawed, divided

Mix chocolate and condensed milk until well blended. Pour into crust; sprinkle with pecans. Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes or until well blended. (Mixture will be thick). Spoon 1 ½ cups of the pudding over the nuts in crust. Add half of the whipped topping to the remaining pudding; stir with wire whisk until well blended. Spread over pudding layer in crust; top with reaming whipped topping. Refrigerate at least 3 hours. Store leftover pie in refrigerator.
