New York Strip Steak with Blue Cheese Butter 

For Blue Cheese Butter:

1 stick unsalted butter or margarine, at room temperature

4 oz. crumbled Blue Cheese

¼ teaspoon garlic salt

¼ teaspoon freshly ground black pepper 

For the Steak:

(4) 8 to 10 oz. New York Strip Steaks 1-1 ½ inches thick

Vegetable or Olive oil

Kosher Salt

Freshly ground black pepper


To make the butter, blend the butter or margarine, blue cheese, garlic salt and pepper in a medium bowl.  Refrigerate until needed. 

Allow steaks to stand at room temperature for 30 minutes before grilling.  Brush with vegetable or olive oil and season with salt and pepper.  

Oil grill racks.  Preheat your grill using all burners set on high with the lid closed for 10-15 minutes. 

 Place steaks on grill, close the lid, cook for 4-5 minutes per side for medium-rare.  Add a minute or two per side for medium.  Or, insert meat thermometer into thickest part of one of the steaks, without going all the way through, and grill until thermometer reads 130-degrees F.  Remove from grill and let rest 5 minutes before serving.  Serve with a dollop of the blue cheese butter.
