Garlic/Parmesan Chicken Wings (5/30/2014)

Garlic/Parmesan Chicken Wings


Cold water
2 tablespoons red wine vinegar or balsamic vinegar
¼ cup salt
1 bay leaf
3 teaspoons Italian Seasoning
3 cloves whole garlic
8 cloves garlic, minced
1 pinch salt
3 tablespoons Olive oil
1 tablespoon ground black pepper
2 teaspoons red pepper flakes
4 lbs. chicken wings


Parmesan breading:
¼ cup bread crumbs
1 cup finely grated Parmesan cheese
1 teaspoon Italian Seasoning


Preheat oven to 450-degrees F. Line a baking sheet with aluminum foil and coat with cooking spray.


In a medium bowl, mix together Parmesan breading ingredients and set aside.


Fill a large pot with water, about ¾ way full. Add, vinegar, ¼ cup salt, bay leaf, Italian seasoning, and 3 whole garlic cloves, cover and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry, at least 15 minutes.


Mash garlic and a pinch of salt together until smooth. Combine garlic mixture, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and toss to coat. Sprinkle with ½ cup Parmesan breading mixture. Transfer to the prepared baking sheet and sprinkle with remaining ½ cup Parmesan breading, or as desired. Bake in the preheated oven until browned, 20-25 minutes. Serve with creamy blue cheese dressing.
