BRINED BRAT


 


10-12 Fresh Bratwurst


2 large onions, any variety, sliced


1 teaspoon caraway seeds


1 cup apple cider vinegar


5-6 cups water


6-8 whole cloves of garlic, cut in half


 


Grill brats on medium heat grill, just until golden brown on all sides, about 15 minutes.  Remove to a separate pan. 


 


In a large pot, add water, onions, apple cider vinegar, caraway seeds, and garlic.  Cover and bring to a boil.  Reduce heat to simmer.  Reduce heat to low and add grilled brats (in batches if necessary), cover, and let simmer for 20-30 minutes (if you need to do them in batches, keep brat's you've removed in a large pan in a warm oven).  Stir them occasionally.  Remove brats from pan, and keep warm.  Strain liquid to retrieve onions, and, add them to a large skillet with 2-3 tablespoons of butter or margarine.  Cook over medium heat until onions begin to caramelize.


 


Serve brats in a bun, with caramelized onions and mustard.
