Parmesan Bake Pork Chops (4/25/2014)

Parmesan Baked Pork Chops

6-8 Center Cut Pork Rib Chops (cut ¾-inch thick)
2 eggs, beaten
1 ¼ cup grated Parmesan Cheese
1 ¼ cup Italian Bread Crumbs (homemade, recipe to follow)
1 tsp. pepper
1 tsp. garlic powder

On a plate or pie pan, combine last four ingredients. Dip pork chops into beaten eggs mixture, and, press each one into cheese mixture. Line a pan with aluminum foil and spray with cooking spray. Place pork chops on the pan and bake at 350-degrees for 30-35 minutes (depending on the thickness of the chop).


Italian Bread Crumbs
10-12 slices day old bread, torn into 1-inch pieces
1 tablespoon Italian seasoning
½ tsp. garlic powder
¼ tsp. kosher salt

Place bread pieces and other ingredients in blender and pulse until coarse, about 2 minutes. Line a baking sheet with aluminum foil and spread bread crumbs over baking sheet. Bake at 300-degrees for 5 minutes, and cool 10-15 minutes before using.
