Icelandic Cod fillets
1 ½ cups Italian or Creamy Italian salad dressing (just about any type would work)
1 cup shredded sharp Cheddar Cheese
1 ½ cups crushed potato chips

Preheat oven to 500-degrees F. Coat a 9 x 13-inch baking dish with cooking spray. (For easier clean-up, place aluminum foil on bottom of cooking dish before spraying with cooking spray).

In a medium bowl, marinate the fish in salad dressing for 1-2 hours.

Toss the shredded cheddar cheese with crushed chips together. Place the marinated fish in prepared baking dish and top with the cheese/chip mixture. Discard leftover marinade.

Bake, uncovered in the preheated oven for 8-10 minutes, or until the fish can be flaked with a fork.

(For thicker cuts of fish, lower cooking temperature to 425-degrees and cover lightly with aluminum foil, or, cut it lengthwise to create a thinner fillet). (Just about any type of white fish would work, and, you can change up the salad dressing to Ranch Peppercorn, Ranch, or about any creamy salad dressing, and, try a different type of chip, Nacho Dorito's, crushed Ritz crackers, crushed Cheeze-it's, etc.).
