Chicken Crescent Roll-ups (3/21/2014)

Chicken Crescent Roll-ups

2 cans refrigerated crescent rolls
2 10.5 oz. cans cream of chicken soup
3-4 cooked chicken breasts, diced or shredded
2 cups shredded cheddar cheese
½ teaspoon Cajun seasoning
1 ¼ cups milk
1 8 oz. package cream cheese (softened)

Preheat oven to 400-degrees F. Coat a 9 x 13-inch baking dish with cooking spray.

In a large bowl, mix chicken, cream cheese, 1 cup shredded cheddar cheese, ½ can cream of chicken soup, ¼ cup milk, and Cajun seasoning together.

Unroll crescent rolls and place two triangles together at the seam and press lightly together, stretch out a bit to enlarge and make a big square. Add some chicken mixture (make sure you leave enough for all 8 squares) to the crescent roll and roll up, making sure to seal the chicken mixture inside so it won't leak out. You should have 8 chicken crescent roll-ups. Place in baking dish and bake in oven 15-20 minutes, or until the crescents begin to turn golden brown. Remove from oven.

In a bowl, mix together remaining 1 and ½ cans soup and 1 cup milk until smooth. Pour over chicken and return to oven and bake another 15 minutes. Remove and top with remaining 1 cup of shredded cheddar cheese. Return to oven and bake another 10 minutes, or until cheese is melted. Remove and serve.
