Italian Sausage Soup with Tortellini (1/3/2014)

Italian Sausage Soup with Tortellini

2 lbs. Italian Sausage
1 cup chopped onion
2 teaspoons minced garlic
6 cups beef broth
2 14.5 oz. cans Italian diced tomatoes
1 ½ cup thinly sliced carrots
1 teaspoon dried basil
1 teaspoon dried oregano
1 15 oz. can tomato sauce
2 cups frozen green beans
1 bag frozen cheese tortellini, cooked according to package directions
1 tablespoon dried parsley
Grated Parmesan cheese (optional)

In a large pot, over medium heat, brown sausage and onion. Drain. Add garlic. Stir and cook 1-2 minutes. Stir in beef broth, tomatoes, carrots, basil, oregano, and tomato sauce. Reduce heat; simmer, uncovered for 30 minutes.

Skim any fat from the soup. Stir in beans and parsley. Simmer, covered, for 30 minutes. Ladle into soup bowl, and add some of your cooked cheese tortellini. Sprinkle with grated Parmesan cheese if desired.
