Coca-Cola Cake (11/3/2006)

Coca-Cola Cake

Cake Ingredients:
2 cups flour
2 cups sugar
2 stick's margarine
3 tablespoons cocoa powder
1 cup Coca-Cola (regular diet)
1/2 cup buttermilk
2 eggs (beaten)
1 teaspoon baking soda
1 teaspoon vanilla
1 1/2 cups miniature marshmallows

½ cup (1 stick) margarine
3 tablespoons cocoa
6 tablespoons Coca-Cola
1 box (16 oz.) powdered sugar
1 cup chopped nuts (your choice)


In a large bowl, combine flour and sugar. In sauce pan, combine margarine, cocoa and Coca-Cola. Heat to a boil. Pour over flour and sugar and mix well. Combine eggs, buttermilk, baking soda and marshmallows. Add to flour/sugar mixture and mix well. Batter will be thin and float to the top. Bake in a 15 1/2 X 10 1/2 X 3/4 pan (jelly roll pan) that has been greased and floured. Bake at 350-degrees for 25 minutes.

For frosting: Heat to boil, 1/2 cup margarine, 3 tablespoons cocoa, 6 tablespoons Coca-Cola. Then add 1 box powdered (16 oz. box) sugar. Beat until smooth. Add 1 cup chopped nuts (your choice). Spread over cake as soon as it comes out of the oven. Let cool. Slice and serve.

(If you let it sit overnight, it's taste better the next day)
