Bacon Wrapped Pork Tenderloin Bites (10/11/2013)

Bacon Wrapped Pork Tenderloin Bites with Maple/Mustard Dipping Sauce

Maple Mustard Sauce:
¾ cup pure Maple syrup
3 tablespoons Dijon Mustard
¼ cup Sour Cream

Pork Tenderloin Bites:
12-18 pieces thick cut smoked bacon
1 16oz. Pork Tenderloin
Salt and Pepper
24-36 Toothpicks soaked in water for 30 minutes
Brown Sugar

Preheat oven to 425-degrees.

Combine maple syrup and mustard in a small bowl. Mix well. Pour ¼ cup of syrup mixture into a separate small bowl. Set aside. Add sour cream to original mixture. Set aside.

Cut bacon slices in half and cook just until limp. Bacon should be pliable but cooked. Drain on paper towels.

Trim pork tenderloin and remove silver skin. Sprinkle with salt and pepper. Cut tenderloin into 1-inch cubes. Place in a large bowl and drizzle some of the maple-mustard mixture over all and stir. Wrap each cube with bacon and secure with a toothpick. Spray a large baking sheet with cooking spray. Place tenderloin bites on baking sheet. Cook 10-12 minutes. Turn and baste with remaining maple-mustard mixture and sprinkle some brown sugar over the top of all. Return to oven and cook another 10-12 minutes. Remove and serve immediately with dipping sauce.

Yield: 24-36 pork tenderloin bites.
