Mike's "My Way" Chili (Chili made "My Way!)


I never make standard red chili the same way twice. This is my base recipe, and, feel free to add, subtract, increase, decrease, the ingredients. Some like it more spicy, some less. Some without the sugar, some want a little more sweetness. I never used to like Jalapeno peppers, now, I find I can handle a little more heat and spice, so, I've added peppers and some other spices. Feel free to tweak away.


1 lb. Ground Beef
1 lb. Italian Hot Sausage
1 large onion, chopped
4 cloves garlic, chopped
1 Jalapeno pepper, chopped
1 large green bell pepper, chopped
1 medium red bell pepper, chopped
3-14.5 oz. cans diced tomatoes, undrained
1-6 oz. can tomato paste
2-15 oz. cans tomato sauce
2 tablespoons Chili powder
½ teaspoon cumin
1 teaspoon salt
1 tablespoon brown sugar
½ teaspoon pepper
1/8 teaspoon cayenne pepper
2 cups beef broth or stock
3-15 oz. cans red kidney beans, rinsed and drained


Brown ground beef and sausage in a large skillet with onions. Drain off excess fat. Add to a large crock pot along with the remaining ingredients. Cover and cook on low 7-8 hours.


Serves a bunch!
