Ground Beef Twice Baked Potato Casserole

2 lbs. lean ground beef or ground turkey
½ cup chopped onion
½ cup bread crumbs
1 teaspoon dried sage
1 teaspoon salt
2 eggs
1 tablespoon garlic powder
¾ cup sour cream
8 cups cooked mashed potatoes
2 cups shredded cheddar cheese
Fresh chopped tomatoes
8 slices bacon, cooked crisp and crumbled
3 green onions, chopped

Preheat oven to 350-degrees. Combine ground beef, onions, bread crumbs, sage, salt, and eggs. Spray a 9 x 13-inch baking dish with cooking spray and press ground beef mixture into dish to for a "crust".

Add garlic powder and sour cream to mashed potatoes and mix well. Pour and spread mashed potatoes on top of the beef mixture. Bake uncovered for 30 minutes. Remove from oven and top with shredded cheese. Return to oven and continue cooking 20-30 minutes. Remove and top with tomatoes, bacon, and green onions. Serve.
