Caribbean Jerk Chicken Taco's (5/31/2013)

Caribbean Jerk Chicken Taco's in the crock pot

2-3 lbs. Chicken, cut-up, skinless, rinsed and patted dry
1 bottle Caribbean Jerk marinade
2 tablespoons crushed red pepper flakes
¼ cup green onions, chopped
2 cups shredded cheddar cheese
Salt & Pepper to taste

Sprinkle cut-up chicken pieces with salt, pepper, and crushed red pepper flakes on both sides.

Coat bottom of a 5-6 quart crock pot with half of the jerk marinade. Arrange chicken piece in crock pot and cover with remaining jerk marinade. Sprinkle green onions over chicken. Cover and cook on low 8-10 hours. Shred chicken with fork. Warm tortillas and add chicken, and cheddar cheese. You can also top with other taco toppings if desired.
