Triple Citrus Marinated Flank Steak (5/17/2013)

Triple Citrus Marinated Flank/Skirt Steaks


2 oranges, juiced
2 limes, juiced
2 lemons, juiced
3 cloves garlic, minced
½ cup diced onion
2 tablespoons dried cilantro
1 teaspoon cumin
¼ cup vegetable or olive oil
Salt & pepper
2-3 lbs. flank or skirt steak


In a large bowl, combine orange juice, lime juice, lemon juice, garlic, onion, cilantro, cumin, and vegetable or olive oil. Mix well, and reserve half in a separate container.


In a large plastic bag, add steak, and 3/4 of the marinade. Press out most of the air and seal. Refrigerate overnight, or for at least 4 hours, turning occasionally.


Thirty minutes before you are ready to cook, remove the steak from the refrigerator and let it stand in the marinade. Heat your grill to medium high heat. Remove the steak from marinade and season with salt and pepper.


Grill to your preferred level of doneness. 3-4 minutes per side for medium-rare. Brush with reserved marinade. Remove from grill and let stand 5 minutes before slicing and serving.
