Taco Casserole (4/26/2013)

Taco Casserole


1 ½ lbs. Ground Beef
1 onion, chopped
1 packet of taco seasoning
1 box of taco shells (broken into pieces)
2 cups shredded cheddar cheese
1 can diced green chilies
2 cups Salsa or Taco Sauce
½ cup water or beef broth
Sour Cream (optional)
Black Olives (optional)
Shredded lettuce (optional)
Jalapeno Peppers, diced (optional)


Preheat oven to 375-degrees F.


Brown ground beef and onion. Drain. Stir in salsa or taco sauce, water or beef broth, taco seasoning and chilies. Cook for about 4-5 minutes.


Coat a 9 x 13-inch baking dish with cooking spray. In the bottom of the dish, place a layer of taco shells. Cover with ½ the meat mixture and 1 cup cheese. Top with another layer taco shells, meat mixture and cheese.


Bake for 30-35 minutes, or until cheese is melted. Remove from oven and let rest 10 minutes.


Add dollops of sour cream, black olives, shredded lettuce and Jalapeno's if using.
