Cheesy Ham Breakfast Casserole (3/22/2013)

Cheesy Ham Breakfast Casserole

18 slices white bread, cubed
8 oz. cooked ham, cubed
1 4 oz. can sliced mushrooms, well drained (optional)
2 cups shredded Cheddar Cheese
1 ½ cups shredded Swiss Cheese
6 eggs
3 ½ cups milk
1 tsp. Onion Powder
1 tsp. dried mustard
½ tsp. salt
½ tsp. pepper
2 cups crushed cornflakes
½ cup butter, melted

Spray a 9 x 13-inch baking dish with cooking spray. Line the bottom of the dish with half the bread cubes. Sprinkle 1 ½ cups cheddar cheese, 1 cup Swiss cheese, ham, and mushrooms. Top with remaining bread. And sprinkle the remaining cheddar and Swiss cheese over the top.

In a bowl, whisk together eggs, milk, onion powder, mustard powder, salt and pepper. Pour evenly over casserole. Cover and refrigerate overnight.

When ready to bake, preheat oven to 375-degrees F. In a small bowl, combine crushed cornflakes and melted butter. Spread evenly over the casserole.

Bake 45-50 minutes. Let reset at least 10 minutes to set. Cut and serve.

(you can substitute Pork Sausage, Turkey Sausage, or Hot Italian Sausage for ham, browned and drained well before using in place of diced ham).
