Reuben Panini Sandwiches

2-3 lbs. Cooked Corned Beef, cooled and sliced thin
8 slices Swiss Cheese
1 can Sauerkraut, drained well
1 Bottle Thousand Island Dressing
Softened Butter or Margarine
Rye Bread
½ cup vinegar
2 whole garlic cloves, peeled

Cooking the Corned Beef:

First, make sure to get the cut of corned beef called "the flat" or "the bottom".

Remove corned beef from package. Reserve seasoning packet, if there is one. Coat the inside of the crock pot with nonstick cooking spray. Add meat to crock. Pour water over the top until it's just about covered. Add vinegar and garlic. Turn on low and cook 8-10 hours (depending on the size of the flat). Remove and cool, then, slice.

Preheat Panini grill to high.

Spread softened butter or margarine on to all slices of the bread, what will be the outside of the sandwich. Turn over the slices and spread a layer of Thousand Island dressing on each slice. Add a slice of Swiss cheese on each piece of bread. Place a generous amount of Sauerkraut on cheese, then a generous amount of Corned Beef. Put the top and bottom pieces together. Grill sandwiches in batches, 5-6 minutes, or until cheese is melted and grill marks appear. Serve immediately and enjoy!

If you do not have a Panini press, you can make these in a large skillet over medium-high heat. Grill until browned on each side.
