Baked Balsamic Maple Glazed Salmon (2/23/2013)

1 Whole Salmon filet, cut into serving size pieces
¼ cup real maple syrup
¼ cup balsamic vinegar
1 tablespoon Dijon Mustard
1 clove garlic, minced
2 tablespoons butter or margarine, melted
Salt and pepper, to taste

Lightly coat a 9 x 13-inch baking dish with cooking spray.

Heat oven to 450-degrees F.

In a saucepan, over medium heat, whisk together the syrup, vinegar, mustard, garlic, and melted butter or margarine. Heat until just hot. Remove from heat, and pour half in a small bowl, reserving the rest for serving.

Place salmon pieces (skin side down) on baking sheet and sprinkle with salt and pepper. Brush with glaze. Bake 10 minutes, and brush again with remaining glaze. Bake another 5 minutes, brush with more glaze, bake another 5 minutes, or, until salmon flakes easily with a fork. Garnish with dried parsley if desired and serve with remaining glaze.
