Pork Parmesan (2/8/2013)

Pork Parmesan

1 cup Italian seasoned bread crumbs
½ cup grated Parmesan Cheese
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
2 eggs, beaten
8 pork cutlets, pounded thin and tenderized
4 tablespoons Olive or vegetable oil (more if needed while browning)
1 jar spaghetti sauce (your choice)
8 slices Mozzarella Cheese
1 lb. spaghetti or linguini

In a large pot, prepare spaghetti or linguini according to package directions. Drain and keep warm.

In a pie pan, combine the bread crumbs, Parmesan cheese, salt, pepper, and paprika. In another pie pan, beat eggs. Dip each cutlet in the egg, and then coat both sides with crumb mixture.

In a large skillet, heat oil over medium heat. Add cutlets and brown on both sides, 2-3 minutes on each side, or until golden brown. Remove from skillet, and drain on paper towels on a large platter.

Heat oven to 400-degrees F. Arrange cutlets in a single layer in a 9 x 13-inch baking pan. Bake for 15 minutes. While cutlets are baking, warm spaghetti sauce. After 15 minutes of baking, add a slice of Mozzarella cheese to the top of each cutlet. Bake another 3-4 minutes, or until cheese is melted. Remove from oven, and, place on a serving plate. Top with a little spaghetti sauce. Serve remaing sauce with spaghetti or linguini.
