Italian Beef Sandwiches II (The Sequel) (12/14/2012)

Italian Beef Sandwiches II

4-5 lb. beef rump roast
2 tablespoons oil
2 cups Beef Broth or Stock
1 16 oz. bottle of Zesty Italian Salad Dressing
3 tsp. Italian seasoning
1 tsp. crushed red pepper flakes
1 tsp. garlic powder
1 bay leaf
1 jar Pepperoncini peppers (chopped) with ½ the juice
Provolone or Mozzarella cheese slices
French Bread

In a large skillet over medium heat, heat oil. Add roast and sear on all sides. Remove and place in a large slow cooker. Add beef stock or broth, Zesty Italian salad dressing, Italian seasoning, red pepper flakes, garlic powder, bay leaf, and peppers with ½ of the juice.

Cook over low heat 7-8 hours.

Shred or slice meat. Serve over French bread. And, if you'd like, serve with a side of the beef juice for dipping.
