Country Style Pork with White Beans

3-4 lbs. Country Style pork ribs
1 tablespoon salt
2 teaspoons ground black pepper
3 tablespoons Olive Oil
1 large onion, chopped
4 carrots, peeled and chopped
3 stalks celery, chopped
3 cloves garlic, minced
3 tablespoons all-purpose flour
1 cup dried white northern beans
6 cups beef or chicken stock or broth
1 28-ounce can diced tomatoes
1 tablespoon dried sage leaves
2 bay leaves
1 tablespoon dried parsley
1 package egg noodles, cooked according to package directions.

Season ribs with salt and pepper. In a large pot, heat olive oil over medium high heat. Sear the ribs until well browned on all sides, about 8-10 minutes. Remove ribs and set aside.

To the pot, add the onions, carrots, and celery. Reduce heat to medium and cook, stirring occasionally, until the onions are lightly caramelized, about 6-7 minutes. Add the garlic and a sprinkle of salt and pepper to the pot and cook about 30 seconds. Sprinkle the flour into the pot and stir to combine. Cook the flour mixture, stirring occasionally for 2 minutes. Add the beans, stock or broth, and the diced tomatoes, sage, and bay leaves to the pot and stir to combine. Bring to a boil and reduce to simmer. Add the seared ribs. Simmer the ribs for 1 ½-2 hours (or until beans are tender), stirring occasionally and scraping the bottom of the pan to prevent sticking. When ribs are done, add the dried parsley to the pot and serve hot over cooked egg noodles or white rice.

You can also make in the crock pot. After you've added everything into the stock pot, except the pork ribs, just add the pork ribs to a large crock pot, then transfer contents of stock pot into crock pot, cover, and cook on high 3 hours. Reduce heat to low and continue to cook 4-5 more hours.
