Vegetable Beef soup (8/17/2012)

1 lb. ground beef
1 lb. ground turkey
1 large onion, chopped
1 clove garlic, minced
3-4 medium tomatoes, chopped or 2 14.5 oz. cans diced tomatoes (undrainded)
3 medium potatoes, peeled and diced
3 carrots, sliced
1 cup chopped celery
1 large can V-8 or tomato juice
1-2 cups water, depending on how thick you like your soup
4 beef bouillon cubs
2 tsp. dried basil
1 tablespoon dried parsley flakes
Small bag frozen mixed vegetables
Salt and pepper to taste

Brown and crumble ground beef, turkey, onion, and garlic in a large dutch oven. Drain. Add to a large 5-quart crock-pot. Add remaining ingredients. Cover and cook on low 6-8 hours, or on high 3-5 hours.
