Zesty Italian Country Style Ribs (7/27/2012)

Zesty Italian Country Style Ribs

2 cups Zesty Italian salad dressing
¼ cup soy sauce
1 tablespoon garlic, minced or 1 tsp. garlic powder
½ teaspoon pepper
4-5 lbs. bone-in country-style pork ribs
3 tablespoons olive oil
2 medium onion, sliced into rings

In a small bowl, stir together salad dressing, soy sauce, garlic and pepper. Place ribs in a large re-sealable plastic bag or large baking dish and cover with ½ of the salad dressing mixture. Make sure they are coated well. Save the other half of salad dressing mixture for baking the ribs. Place ribs in refrigerator and marinate for 6-8 hours. Heat your grill to medium heat (350-degrees), spray grill grate with cooking spray to avoid ribs from sticking. Sear ribs on both sides about 2-3 minutes. Arrange onion rings in an un-greased 9" x 13" baking pan. Remove ribs from grill and arrange on top of the onion rings. Drizzle the remaining salad dressing mixture over top of ribs. Cover tightly with aluminum foil. Bake at 350-degrees for 1 ½ hours, our until tender. Serves 6-8
