Rub Me Tender Beer or Pop Can Chicken (7/20/2012)

"Rub me Tender" Beer or Pop Can Chicken


1 3-4 lb. whole chicken, cleaned, rinsed and patted dry
Vegetable oil as needed
Cremer's "Rub Me Tender" rub
1 can beer (or Cola, Sprite, Dr. Pepper)
1 small onion, cut into chunks
1 small green pepper, cut into chunks


Sprinkle 1 tablespoon Cremer's Rub Me Tender rub in the cavity of chicken. Add chopped onion and pepper. Loosen skin over chicken breasts, and coat with some more rub. Coat skin of chicken with vegetable oil. Then, sprinkle chicken skin completely with rub.


Empty beer or soda can halfway (you can figure out a way to use the extra I'm sure). If you still have some extra rub, you can pour some of it in the can. Now, stuff the can up the chicken's posterior so it's standing up straight.


Heat grill to 350-degrees (medium heat). We will be using indirectional heating to cook our chicken. If using a meat thermometer, place in thickest part of the thigh, without touching bone. Place chicken upright on the side of grill with no heat under it, close lid, and, let grill for 1 hour. Do NOT open grill. After an hour, check chicken. If needed, continue cooking until internal temperature reaches 160-165-degrees.
Remove from grill and let rest 10 minutes. Carve and serve.
