Grilled Stuffed Bacon-Blue Cheese Burgers (6/22/2012)

Grilled Stuffed Bacon-Blue Cheese Burgers

3 lbs. Cremer's Ground beef
6-8 oz. Cream Cheese, softened
2/3 cup crumbled Blue Cheese
6-8 slices bacon, cooked crisp, drained on paper towels and crumbled
1 tsp. salt
1 tsp. garlic powder
½ tsp. pepper
2 lbs. sliced fresh mushrooms
2 tablespoons Olive oil
2 tablespoons water
2 tablespoons Dijon mustard
8 Hamburger buns
1 small can French's fried onions, warmed (optional)
Mayonnaise, leaf lettuce, and tomato slices (optional)

Combine the salt, garlic powder, and pepper. In a large bowl, add ground beef and season with the salt, garlic powder, and pepper and mix well. Shape beef into 16 thin patties. Make a shallow well in the center of each patty. Combine the cream cheese, blue cheese, and crumbled bacon in a bowl. Spoon into the well you made in the center of the beef patties. Top with remaining patties and press edges firmly to seal. Combine the salt, garlic powder, and pepper, and sprinkle over patties.

Grill burgers, covered, over medium heat for 5-7 minutes on each side, or until a meat thermometer reads 160-degrees F. Remove from heat, and let rest 5 minutes.

Meanwhile, in a large skillet, sauté mushrooms in oil until tender. Stir in water and Dijon mustard.

Serve burgers on buns with mayo, lettuce and tomato, mushrooms and heated French's fried onions (if using).
