Chorizo-Potato Tacos (5/4/2012)

Chorizo-Potato Tacos

1 lb. Chorizo Mexican Sausage
¾ bag Southern Style Hash browns, thawed
1 small onion, chopped
1 tsp. garlic powder
1 jar salsa
2 cups shredded Monterey Jack or Mexican blend cheese
Shredded lettuce
12 Corn Tortillas
Hot sauce to taste (optional)
Guacamole (optional)
Sour cream (optional)


In a large, non-stick skillet, over medium heat, combine the Chorizo, onion, garlic powder, and ½ jar salsa. Break up sausage. Stir until sausage is browned and cooked through and onion is soft. Drain off excess fat. Add ¾ bag potatoes. Continue to cook over medium heat. Stir often until potatoes are browned. As the mixture cooks, mash everything together a bit with the back of a large spoon or spatula.


Heat tortillas. Spread a little shredded cheese on tortilla. Add sausage mixture. Top with shredded lettuce, salsa, hot sauce, guacamole, and sour cream, if using.
