Homemade Creamy Au Gratin Potatoes and Ham


2-3 cups cooked ham, diced
3 baking potatoes, scrubbed and sliced into ¼ inch slices
1 teaspoon salt, divided
1 stick butter or margarine
6 tablespoons all-purpose flour
½ teaspoon pepper
4 cups milk
3 cups shredded cheddar cheese


Preheat oven to 400-degrees F. Spray a large baking sheet with cooking spray. Place sliced potatoes on baking sheet and bake for 15 minutes, turn, and bake another 15 minutes. Remove from oven and set aside.


In large saucepan, melt butter or margarine over medium heat. Mix in ½ teaspoon salt. Add flour a little at a time, stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese, and continue stirring until melted, about 1 minute.


Spray a 9 x 13-inch baking dish with cooking spray. Layer ½ potatoes and ½ the ham into bottom of the baking dish, and pour ½ the sauce over that layer. Sprinkle with remaining ½ teaspoon salt and pepper. Repeat with remaining potatoes, ham, and cheese sauce. Cover with aluminum foil and bake 1 hour. Remove from oven and carefully remove aluminum foil. Let rest 5 minutes and serve
