Steak Fajita Wrap (8/12/2011)

Steak Fajita Wrap's


2-3 lbs. Beef Tenderloin, cut into thin strips
2 tablespoons vegetable oil
1 large Green Bell pepper, cut into 1/2-inch strips
1 large Red Bell pepper, cut into 1/2-inch strips
1 large Yellow bell pepper, cut into ½-inch strips
1 large onion, thinly sliced
1 Jalapeno, seeded and diced fine
2 pkgs. Fajita seasoning mix
2/3 cup water
Juice of 1 lime
1-2 tomatoes, sliced thin
12-16 soft flour Tortillas
Salsa
Sour Cream
Leaf Lettuce
Tomatoes, sliced thin, optional


In a large skillet or Dutch oven, add oil and heat to medium. Add peppers, onion, Jalapeno, fajita seasoning packages, water and juice of 1 lime. Stir and cook until vegetables are tender 8-10 minutes. Add beef strips and cook until medium-rare. Turn heat to down to simmer, and let cook a few minutes.


Heat soft flour fajita's as instructed on package. When heated, add leaf lettuce to flour fajita and top with beef mixture then add some salsa and sour cream. Fold or roll together and serve.
