Hot Chicken and Cheese Sandwiches (6/10/2011)

Hot Chicken and Cheese Sandwiches


2 ½ lbs. Chicken tenders
1 tsp. garlic powder
½ tsp. salt
½ tsp. pepper
½ tsp. cayenne pepper
1 tsp. Italian Seasoning


¼ cup lemon juice
1 cup mayonnaise
1 lb. American Cheese, diced small
¼ cup chopped onion
1 cup chopped celery
1 tsp. salt
½ tsp. pepper
12-16 hamburger buns
Aluminum foil


In a large skillet over medium heat, add chicken tenders. Season tenders with garlic powder, salt, pepper, cayenne pepper, and Italian seasoning. Cook and stir until done, about 10-15 minutes. Remove from heat. Cut into small chunks.


In a large bowl, add chicken, cheese, onion, and celery and mix well. In separate bowl, stir together lemon juice, remaining salt, remaining pepper, and mayonnaise. Add to chicken mixture. Fill unbuttered buns with the mixture. Wrap each sandwich tightly in aluminum foil. Refrigerate until ready to bake.


Remove from refrigerator a half hour before baking. Place sandwiches on baking sheet and bake at 300-degrees F for 15 minutes.


You can make these ahead of time and freeze them as well. Just thaw before baking. You can also vary the type of cheese. Try cheddar, Colby-jack, provolone, swiss, etc.
