Grilled Lemon Herb Pork Chops (5/27/2011)

Grilled Lemon Herb Pork Chops

½ cup Lemon Juice, fresh squeezed or bottled
4 tablespoons vegetable oil
4 cloves garlic, minced
½ tsp. Lemon pepper
1 ¼ tsp. salt
½ tsp. dried oregano
½ tsp. pepper
8 Rib eye pork chops (1-inch thick)

In a large resealable bag, combine the lemon juice, oil, garlic, lemon pepper, salt, oregano, and pepper. Take a fork, and poke chops on both sides. Place chops in bag, making sure their covered with marinade, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.

Pre-heat grill on high heat. Remove chops from bag. Lightly oil grill grate. Sear chops quickly, then move to other side of grill, and turn down heat to medium-low, grill 10-12 minutes per side until done. Chops are done at 145-degrees F.
