Cavatini (7/28/2006)

1 lb. Lean Ground Beef
1/2 lb. sliced pepperoni or Italian sausage (optional)
2 8 oz. can Italian tomato sauce
1 14.5 oz. can Italian style Stewed tomatoes (chopped)
1 chopped onion
1/4 c. red or green pepper (chopped)
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. Italian seasoning
1/2 tsp. garlic (minced, chopped or garlic powder)
1 medium jar spaghetti sauce (your favorite) for topping
1 cup 2 kinds of noodles (rotini, wagon wheel, penne, shells..etc.)
3 Cups Mozzarella Cheese (divided)
1 4 oz. can sliced mushrooms (optional)

Boil and drain noodles according to package directions. Preheat over to 350-degrees. Brown beef, sausage and onions. Drain off excess fat. Turn off heat. Mix all ingredients together except 1 cup Mozzarella cheese and jar of spaghetti sauce. Pour into greased 9 x 13 pan. Top with jar of spaghetti sauce. Cover and bake 45 minutes. Add remaining cup of cheese and bake uncovered for another 15 minutes or until bubbly hot. Let rest 5 minutes, and then serve.

A side salad and garlic bread make great side dishes.
You can add some minced garlic to the ground beef and onions as they're browning for more flavor. If you want, you can either use sliced pepperoni or ground Italian sausage.
I didn't have either on hand, so, I just went with the ground beef.
