Sweet & Cheesy Turkey Meatloaf (3/4/2011)

Sweet & Cheesy Turkey Meatloaf


2 lbs. of ground Turkey
3/4 sleeve of Ritz Crackers, crushed
3 eggs
4 oz. can of mushroom pieces and stems, drained
5 slices of Swiss cheese
1 package of Lipton Onion Mushroom soup mix
1 tablespoon crushed red pepper (less if you don't like it too spicy)
2 tablespoons lemon pepper
1 tsp. garlic salt
1 tsp. black pepper
1 tsp. basil
1 tablespoon dark brown sugar
3 tablespoons Teriyaki sauce
2 tsp. Greek Seasoning
½ cup V-8
Dark brown sugar
Ketchup


Preheat oven to 350-degrees F. In a large bowl, mix turkey, crackers, eggs, mushrooms, onion mushroom soup mix, crushed red pepper, lemon pepper, garlic salt, pepper, basil, 1 tablespoon dark brown sugar, teriyaki sauce and greek seasoning. Layer ½ of the mixture in a meatloaf pan. Top with 5 slices of Swiss cheese. Add remaining mixture on top of cheese. Take a fork and poke holes all the way to the bottom. Pour the V-8 over the top. Bake for 45-55 minutes, or until internal temperature reaches 160-degrees.


While meatloaf is cooking, mix some brown sugar and ketchup in a bowl into a semi-thick sauce. After meatloaf has cooked, remove from oven and spoon the brown sugar/ketchup mixture over the top. Return to oven for another 10-15 minutes. Remove, let rest 5-10 minutes. Serve.
