Stuffed Pork Chops with Apple Pork Gravy (2/11/2011)

Stuffed Pork Chops with Apple Pork Gravy

2 Cremer's boneless stuffed pork chops
1 pkg. McCormick Pork Gravy
1 apple, peeled, cored and diced
1 small onion, thinly sliced
1 bottle apple juice
Salt & Pepper for seasoning
Oil for browning

In a small skillet over medium heat, add diced apple and sliced onion. Cook 5-7 minutes or until onion is translucent. In a medium sauce pan, add gravy mix, 1/3 cup apple juice and 2/3 cup water. Stir well. Add cooked apple and onions. Bring to a boil, and cook until mixture begins to thicken, stirring frequently. Reduce heat to low, stir occasionally.

Preheat oven to 300-degrees F. Season chops with salt and pepper.  In a large skillet, heat a few tablespoons of vegetable oil. Add pork chops and brown a few minutes on each side. In a 9 x 13 inch baking dish, place a wire rack on bottom of dish. Transfer the chops to dish, placing them on the wire rack. Add 2/3 cup apple juice and 1/3 cup water to the bottom of the baking dish. Cover and bake 30-35 minutes. Remove from oven and serve.

Boneless stuffed pork chops are on sale at Cremer's through 2-13-2011 or while supplies last, 2 10 oz. chops, $4.99.

This week's recommended wine from Van's Liquor Store in East Dubuque:
Beringer Founders Estate Pinot Noir, 750ml bottle, $5.99 through 2-14-2011.
