Roasted Bone-In Pork Roast (12/10/2010)

Roasted Bone-In Pork Roast


4-5 lb. Bone-in Pork Roast
2 tablespoons spicy brown mustard
1 tablespoon yellow mustard
2 tsp. dried thyme
2 tsp. dried sage
2 tsp. dried rosemary
1 tsp. garlic powder
Salt & Pepper to taste
2 tsp. oil (for browning)


Preheat oven to 350-degrees F. Remove roast from refrigerator and let stand at room temperature 30-50 minutes. In a small bowl, combine together both types of mustard, thyme, sage, rosemary, garlic powder, salt and pepper. Rub all over roast. Heat a large skillet over medium-high heat. Add oil. Sear meat on all sides, about 3-4 minutes per side. Place on a roasting rack in a large roasting pan and roast in oven, fat side up, until done, about 2 hours, or until internal temperature using a meat thermometer reads 150-degrees F. Remove from oven, and place on cutting board, tented with aluminum foil, and let rest 20 minutes. Slice and serve.
