Savory Salisbury Steaks (8/6/2010)

Savory Salisbury steak

3 lbs. lean Ground Beef
2/3 cup dry Italian bread crumbs
½ cup onion, finely chopped
2 eggs, beaten
1 tsp. salt
½ tsp. pepper
1 tsp. dried basil
1 tsp. dried thyme
1 tsp. garlic powder
4 cups beef broth
2 tbsp Worcestershire sauce
1 large onion, sliced very thin
2 4 oz. cans sliced mushrooms, drained
1/3 cup cold water
1/3 cup cornstarch

Heat oven to 350-degrees F.

In a large bowl, combine ground beef, bread crumbs, chopped onion, eggs, salt, pepper, basil, thyme, and garlic powder. Shape into 8 patties, about 3/4 -inch thick. In a large skillet over medium-high heat, cook patties in batches until both sides are brown, about 5 minutes per side. Spray a 9 x 13-inch baking dish with cooking spray. Remove patties from skillet and place in baking dish. Into the skillet add broth, Worcestershire sauce, onion slices, and mushrooms. Heat to boiling. While mixture is coming to a boil, in a small bowl, combine cornstarch and water and add to skillet, bring to boil, stirring constantly, for 4-5 minutes, or until thick. Pour over patties in baking pan. Cover with aluminum foil and bake in 350-degree oven for 40-45 minutes. Serve.

Serves 8.

This week's recommended wine from Van's Liquor Store in East Dubuque-Wollersheim, from Madison, Wisconsin, all types, 15% off through 8-9-2010.
