Chocolaty Chocolate Pie/Cremer's Italian Beef Sandwiches (6/25/2010)

Chocolaty Chocolate Pie


Pie filling:
2 cups white sugar
5 tablespoons unsweetened cocoa powder
¼ cup all-purpose flour
1 (12 oz.) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks
¼ cup butter or margarine
1 frozen 9-inch single crust pie crust (unbaked)


Meringue:
4 egg whites
¼ cup white sugar


Preheat oven to 350-degrees F. In a saucepan, whisk together 2 cups sugar, cocoa, and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add butter or margarine. Heat, over medium heat, stirring occasionally just until butter or margarine is melted. Pour filling into unbaked pie crust. Bake in preheat over for 45-50 minutes, or until pie in not "wobbly" when shaken. Remove from oven.


Using an electric mixer, in a medium bowl, beat egg whites until soft peaks form. Gradually add ¼ cup sugar, beating constantly with mixer, until stiff peaks form. Spread meringue on pie. Return pie to oven, and bake until meringue is golden about 8-10 minutes. Remove from oven and let cool completely. Slice and serve.
