Honey Mustard Mozzarella Chicken (5/14/2010)

Honey Mustard Mozzarella Chicken

6 boneless, skinless chicken breasts, rinsed and patted dry
¾ cup honey
½ cup prepared mustard
1 ½ tablespoons corn starch
Lemon pepper to taste or regular pepper
12 slices bacon (Cremers smoked bacon)
8 oz. Mozzarella cheese, sliced

Wrap 2 slices bacon around each chicken breast, secure with toothpick if necessary.

Place chicken breasts in a 9 x 13-inch baking dish. Mix together honey, mustard and corn starch. Drizzle mixture over chicken breasts, sprinkle with lemon pepper or regular pepper. Place in the refrigerator at least 1 hour. Remove chicken 15 minutes before baking to allow to come to room temperature.

Preheat oven to 375-degrees F.

Place chicken in oven. Bake chicken 40 minutes. Remove and top with a slice of mozzarella cheese. Bake another 10 minutes or until chicken juices run clear and cheese is bubbly.

Stop by Cremer's on Rhomberg avenue and pick up boneless, skinless chicken breasts, smoked bacon and Wisconsin mozzarella cheese.
