Easy Fish Stew

6 tablespoons Olive Oil
½ cup chopped onions
2 stalks celery, chopped
2 cloves garlic, minced
¾ cup fresh parsley, chopped
1 14.5 oz. cans diced tomatoes
1 cup frozen mixed vegetables (thawed)
2 tsp. tomato paste
8 oz. clam juice
1 15 oz. cans navy beans
¾ cup dry white wine or chicken broth
1 ½ lbs. fish fillets (cod) cut into 2 inch pieces
½ tsp. oregano
½ tsp. Tabasco
½ tsp. thyme
½ tsp. pepper
Salt to taste

Heat olive oil in heavy large pot over medium-high heat. Add chopped onion, celery and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomatoes, mixed vegetables, tomato paste and cook 2 minutes longer.

Add clam juice, dry white wine or chicken broth, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Serve.
