Crock pot Breakfast casserole

1 dozen eggs
1 cup milk
1 tsp. minced garlic
1 package (32oz) frozen hash brown potatoes (shredded or southern style).
1 lb bacon (cooked, drained and cut into pieces)
1 lb diced ham
1 onion, chopped (optional)
3/4-1 lb shredded cheddar cheese
1/4 t dry mustard
salt & pepper to taste

Spray crock with cooking spray. Layer potatoes, bacon, diced ham, onions and cheese in 2-3 layers. Beat the eggs, milk, garlic and spices and pour over the whole mixture. Cook on low for 8-10 hours or high 4-5 hours until eggs are set and thoroughly cooked.
