Shrimp Scampi with linguine

3 tablespoon butter
3 tablespoons olive oil
5 cloves garlic, minced
¾ cup chicken broth or white wine
1 tsp. salt
¼ tsp. crushed red pepper
1 ½ tsp. Italian seasoning
2 lbs. pounds large shrimp, shelled & deveined
½ cup fresh chopped parsley
Juice from 1 lemon
Grated Parmesan cheese (for garnish if desired)
1 package linguine (cooked according to package directions)

In a large skillet, melt butter with olive oil. Add garlic and sauté 1 minute. Add chicken broth or wine, salt, pepper, crushed red pepper and Italian seasoning. Bring to simmer. Let wine or broth mixture reduce, about 2-3 minutes. Add shrimp and sauté 2-4 minutes, or until the shrimp turn pink. Quickly stir parsley and lemon juice into pan. Remove from heat and transfer to a separate serving bowl. Serve immediately over fresh cooked linguine. Sprinkle with some grated parmesan cheese, if desired.
