Cube Steak Strip sandwiches (1/29/2010)

Cube Steak Strip Sandwiches

2 medium onions, sliced
1 stick butter or margarine
2 cloves minced garlic
3-4 lbs. Cube Steak
Season salt (Lawry's or other brand is fine)
Fresh ground pepper to taste
1 cup Worcestershire sauce
1 cup beef broth or stock
Hot sauce (to taste)
6 Crusty rolls, split in half
Your favorite sliced or shredded cheese

In a large skillet, melt 2 tablespoons butter or margarine and add onions. Cook until soft and light brown, about 7-10 minutes. Add 1 minced garlic clove, and stir until fragrant, about 1 minute longer. Remove from skillet and set aside.

Slice cube steaks against the grain. Season with seasoning salt and pepper. Heat 2 tablespoons butter or margarine in same skillet over high heat until melted. Add meat in single layers. Cook until brown on one side, do not disturb. When brown, flip and cook the other side. Add Worcestershire sauce, beef broth or stock and a few shakes of hot sauce and 2 more tablespoons butter or margarine. Add onions and 1 more minced garlic clove. Stir to combine. Cook until sauce is reduced by about a half. Cover and simmer.

Use remaining 2 tablespoons butter or margarine to coat split rolls. Heat oven broiler to high. Place rolls, face side up on baking sheet about 5 inches from broiler, and broil 1-2 minutes until toasted. Be careful not to burn!

To assemble, place meat mixture over one half of roll, followed by a spoonful of juice. Top with your favorite cheese and cover with the other half of roll. Enjoy!

You can vary this recipe greatly, adding other favorite spices, sliced mushrooms when cooking onions, etc.
