Mike's Triple-Brat-Pass
(Bacon Wrapped Bratwurst in Beer sauce)

Brat recipe
10 Brats
2 12 oz. cans beer (if you need more liquid, add water)
1 large onion, chopped
½ cup brown sugar
1 ½ tsp. cayenne pepper
15 slices bacon, cut in half


Beer Sauce recipe
2 14.5 oz cans stewed tomatoes
2 cans beer
1 large onion, chopped
1 green pepper, chopped
Couple of dashes cayenne pepper
1 ½ tablespoons brown sugar

For Brats-
Add 2 cans beer to large stock pot and add brats and chopped onion. Bring to simmer over high heat; do not boil! Reduce heat to medium and simmer for 15 minutes. Remove brats from beer and let cool to room temperature.

Preheat oven to 425-degrees F. Toss the brown sugar and cayenne together in a large bowl and set aside. Cut each brat into three piece, wrap each piece with half strip of bacon, and secure with a toothpick. Toss the brats with the cayenne mixture to coat, then place on a wire rack over a aluminum foil lined baking pan. Bake about 25-30 minutes, or until bacon is brown and crisp.

For Beer Sauce

Mix all ingredients in large saucepan and bring to simmer over medium heat. Pour over wrapped brat pieces, and keep warm until ready to eat. Do not let the sauce boil.
