Pizza Margherita (7/31/2009)

Pizza Margherita (this recipe will make 2 10-12" pizza's)

2 Prepared thin crust pizza crust (I used Mamma Mary's) or make your own homemade pizza dough.
1 tablespoon Olive Oil
1 28-oz. can Crushed tomatoes, undrained
2 tablespoons snipped fresh basil
2 cloves garlic, minced
1 6 oz. can tomato paste
16 oz. fresh Mozzarella cheese, sliced ( I used Bel Gioioso)
2 tomatoes, sliced thin
Fresh basil leaves

If using prepared pizza crusts, follow baking instruction on package. If using your own homemade dough, Preheat oven to 375-degrees F. Drizzle olive oil on prepared crust with either method of cooking.

For sauce, in a medium bowl, combine crushed tomatoes, snipped basil, garlic, and tomato paste. Spread a thin layer of sauce on pizza crust. Bake for 15 minutes in oven. Remove pizza and place mozzarella and sliced tomatoes in a single layer on top of the sauce. Bake for 10-13 minutes more or until crust bottom is crisp and brown. Top with basil leaves. Cut into slices are serve immediately.

This week's recommended wine from Van's Liquor Store in East Dubuque-Gazela Vinho Verde 750 ml bottle, $4.49 through Monday, August 3rd, 2009
