Taco Soup (5/5/2006)

Slow Cooker Taco Soup
(recipe courtesy of

1 lb. ground beef
1-diced onion (1 large onion)
1 (16 oz.) can chili beans, with liquid
1 (15 oz.) can kidney beans, with liquid
1 (15 oz.) can whole kernel corn, with liquid
1 (8 oz.) can tomato sauce
2 cups water
2 (14.5 oz.) cans diced tomatoes
1 (4 oz.) can diced green chili peppers
1 pkg. Taco seasoning mix

In a medium skillet, cook the ground beef over medium heat. Drain and set aside. Place ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chili peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on low for 6-8 hours.

You can also make this in a stockpot on the stove. Brown beef and onions and add remainder of ingredients. Bring to boil. Reduce heat to simmer. Cook for 45-60 minutes.
