What a Crock of Pork Chops

8-9 New Potatoes, skin on, sliced
2 yellow onions, sliced
1 (10oz.) can Cream of Celery soup
1 (14 oz.) can chicken broth or stock
3 tablespoons Dijon mustard
1 (8oz.) pkg. Fresh sliced mushrooms
1 teaspoon garlic, minced
1 teaspoon dried basil
2 tablespoon olive oil
8 pork chops (boneless or bone-in)

Place potatoes and onions in the bottom of a large crock pot. In a bowl, combine celery soup, chicken broth, Dijon mustard, mushrooms, garlic and dried basil. Mix well.

Heat olive oil in a large skillet over medium heat. Season pork chops with salt and pepper. Brown chops in hot oil on both sides, about 2 minutes per side. Transfer to crock pot. When all chops are browned, pour soup mixture over all. Cover and cook on low 6-7 hours. Serves 4-6.
