Holiday Coca-Cola Beef Roast & Vegetables

Ingredients:

1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon Montreal Grill Seasoning
4 lb bottom round roast -- (4 to 5)
3 tablespoons oil
12 ounces cola (do NOT use diet)
12 ounces chili sauce
2 tablespoons Worcestershire sauce
2 tablespoons hot pepper sauce
1 lb. Baby red potatoes
1 bag baby carrots
8 oz. Sliced mushrooms
1 medium onion, sliced thin

Method:

Preheat oven to 325ºF. In a small bowl, combine the salt, pepper, grill seasoning and garlic powder; rub over surface of roast. In a Dutch oven, heat the oil to hot and brown roast on all sides. Transfer roast to roasting pan. Combine cola, chili sauce, Worcestershire and hot pepper sauce; pour over roast. Add potatoes, carrots, mushrooms around roast. Cover roast with sliced onions. Cover with aluminum foil and roast for 2-2 1/2 hours until tender, or until meat thermometer reads 138-140-degrees F., for medium rare. If you want it medium, look for 143-145 degrees F. Allow roast to rest 10 minutes before slicing.
