Mushroom-French Onion Salisbury Steak (10/17/2008)

Mushroom-French Onion Salisbury Steak

1 ½ lbs. Lean Ground Beef
¼ cup minced parsley
2 green onions, finely minced
½ tablespoon Worcestershire sauce
½ tsp. Kosher salt
½ tsp. Fresh ground black pepper
¼ cup all purpose flour, plus 1 tablespoon
1 tablespoon vegetable oil
1 large yellow onion, sliced
1 8 oz. Pkg. Fresh mushrooms
1 teaspoon sugar
1 tablespoon minced garlic
1 tablespoon tomato paste
2 cups low sodium beef broth
1/4 cup dry red wine
¼ tsp. Kosher salt
½ tsp. Dried thyme
Frozen Cheese Toast (baked)

In a large bowl, combine ground beef, parsley, green onion, Worcestershire, salt & pepper. Shape into 4 ¾-1-inch patties. Dredge patties in flour. Heat oil in a large pan and over medium heat. Add patties and brown 3 minutes on each side. Remove from pan. Add more oil if needed to pan. Now add onions and mushrooms and sugar to pan; sauté 5 minutes. Stir in garlic and tomato paste and sauté 1-2 minutes. Sprinkle the mixture with 1 tablespoon flour to thicken, cook another minute. Stir in beef broth and wine, then add the salt and thyme. Return meat patties to pan and bring to boil. Reduce heat to medium-low, cover, and simmer 10 minutes. While simmering, prepare cheese toast. Serve patties on warm cheese toast. Serves 4.

This week's recommended wine from Van's Liquor Store in East Dubuque-Alice White, 1.5 Liter bottle, Cabernet, Shiraz & Merlot, $5.99 through Monday, October 20th, 2008.
