Grilled Smoked Sausage, Chicken, Beans n' Taters (8/29/2008)

Grilled Sausage, Chicken, Beans n Taters

¾ lb. Fresh green beans, trimmed and halved
½ pound New Red Potatoes, quartered
1 large onion, sliced
1 Red bell pepper, sliced
1 lb. Smoke sausage, cut into 1 inch pieces
2 Boneless, skinless chicken breasts, cubed
2 cloves garlic, sliced
1 tsp. Dried rosemary
½ tsp. Crushed red pepper flakes
1 tablespoon Montreal Grill seasoning
1 tsp. Salt
1 tsp. Fresh ground black pepper
1 tsp. Olive oil
1 tablespoon butter
1/3 cup water

Preheat grill to medium-high heat. Rinse and clean potatoes. Place in microwaveable bowl and cook on high 5 minutes. Using a large piece of heavy duty aluminum foil, spray with cooking spray. Now place the green beans, potatoes, onion, sausage, chicken and garlic on foil. Now sprinkle seasonings listed over all. Drizzle Olive Oil over all and top with butter. Tightly seal foil around the ingredients, leaving a small opening. Pour the water into the opening, and seal.

Place foil packet on the grill. Cook 25-30 minutes. Remove from grill and let rest 5 minutes. Be careful when opening foil packet, as it will be hot. If fresh green beans are not available, you may use frozen. You may also cook this in the oven. Just place the foil packet on a large cookie sheets and bake in the oven at 425-degrees F and cook for 40-45 minutes.
