Red Wine Burgers with sauteed mushrooms/Chocolate Dream Dessert (5/23/2008)

Red Wine Burgers with sautéed mushrooms

3 lbs. 80 % lean ground beef
½ cup burgundy or other red wine
1 medium onion, finely chopped
2 Tablespoons Worcestershire sauce
2 teaspoons fresh chopped basil or 1 tsp. dried
2 teaspoon fresh thyme or 1 tsp. dried
1 teaspoon seasoned salt
¾ teaspoon cracked black pepper
1 tablespoon minced garlic
1 large package fresh sliced mushrooms
2 tablespoons Olive Oil or butter
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
salt & pepper to taste
12 slices provolone cheese
12 buns, lettuce, tomato slices

Mix first 9 ingredients together. Shape mixture into 12 patties, each about 3/4-inch thick and refrigerate for a couple hours. Grill to desired doneness.

In a large non-stick skillet over medium-high heat, heat 2 tablespoons olive oil or 2 tablespoons butter. Add mushrooms, Worcestershire, garlic and salt and pepper to taste and sauté 5-6 minutes, or until mushrooms have given off most of their moisture. Set aside.

Top burger with mushrooms and add a slice of provolone cheese. Grill another 1-2 minutes, or until cheese is melted. Serve on toasted buns with lettuce and tomato.

Chocolate Dream Dessert

1 pkg. (18 1/4 oz.) Chocolate cake mix
1 pkg. (3.4 oz.) instant vanilla pudding mix
1 cup chocolate syrup, divided
1 (12 oz.) carton Cool-Whip, thawed
½ cup chopped pecans

Prepare cake according to package directions, using a 9 x 13-in. baking pan. Cool on wire rack. Meanwhile, prepare pudding according to package directions. Pour into 9 x 13-in. dish. Tear cake into small pieces and gently push down into pudding. Drizzle with ¾ cup chocolate syrup. Spread with whipped topping. Drizzle with remaining syrup. Sprinkle with pecans. Refrigerate until serving.
